Le Pompon

“Le Pompon” is a raw goat milk cheese with a soft interior and natural rind, crafted in Périgord Vert by Fromagerie du Chêne Vert in Saint-Front-sur-Nizonne, Dordogne, Nouvelle-Aquitaine region. Comprising two discs, the base is larger than the upper one, called “Le Pompon,” flavored with either Espelette pepper or Timut pepper. Its thin, irregular, ivory-colored rind is covered in a delicate white fuzz. The dense white interior is influenced by the spices: black dots for pepper and red for Espelette pepper.
